John Dory

Sometimes known as St Peters fish because of the round black mark on their side which looks like a thumbprint which is traditionally held to be that of St Peter. The John Dory grows to a maximum size of 65cm and 3 kg in weight. Typical life span is about 12 years in the wild. The John Dory eats a variety of fish and occasionally they eat squid and cuttlefish. They live near the seabed, living in depths from 5 meters to 360 meters. They are normally solitary. It is really a Mediterranean species but finds its way to Jersey


The flesh is sought after for its sweetness and firmness. Fillets are nice fried in butter and served up with a sauce made from pureed tomatoes, onion, garlic and olive oil. Also the fish takes other flavours such as vermouth, white wine, orange, Pernod and many herbs.
