Sea Bass

Sea Bass is an attractive streamlined fish covered in grey scales around 36-75cm in length. Generally mature fully grown fish taste better than smaller ones but even small it is a delicious fish, soft in texture and a sweet delicate flavour. The flesh is moist and slightly flaky but the skin is quite oily. This balance allows the fish to be cooked successfully in a variety of ways.
When buying or eating Bass in a restaurant, the consumer must be aware that it could be farmed. Not a great fan of farmed fish myself due the devastating way the fish meal they eat are caught the taste of wild fish will always taste better.
