Turbot

A large flat fish with a firm, sweet flesh, white and moist. It has a deep round body, browny sandy colour with small dark nodules on its upper side. We catch small and large ones around Jersey all year round but they are most common in the early summer months.
Certainly one of the best tasting fish in the sea. It can be enjoyed whole, filleted or as steaks, simply cooked with butter and seasoning.
